Hmm. Windows shouldn’t be putting anything on the Linux drive. Maybe disconnect the other drive before installing Windows.
You could use a separate drive for Linux.
I use bottles for other game launchers. You can select proton version once the bottle is created.
I’ve been using a Logitech g29 (PS4/PS5/PC) for ETS 2. It worked out of the box with no extra stuff installed.

Can get it with flatpak, AUR, or with the install instructions on the GitHub.
I have not adjusted mine though. Seems to work fine for truck game.
G29 will work ootb, newer Logitech wheel may need a custom driver (linked on the oversteer page)
